Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- flour - 3/4 c
- stick margarine - 1 item
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar - 1 c
- ginger - 1 tsp
- nuts optional - 1 c
How to make pumpkin cake roll:
Filling:6 oz. cream cheese1 c. powdered sugar1 stick margarine1/2 tsp. vanilla Beat eggs 5 minutes. Add sugar and pumpkin. Mix well. Blend flour, nutmeg, ginger, cinnamon, salt and baking powder into the pumpkin mixture. Pour batter into waxed paper lined 15 x 10-inch cookie sheet. Sprinkle loaf with nuts, if desired. Bake for 15 minutes at 375°.Remove from oven and turn on towel sprinkled with powdered sugar. Spread filling onto cake. Roll, wrap and freeze. Then slice as desired.
