Pumpkin cake

Ingredients/Components

• sugar - 2 c
• cinnamon - 3 tsp
• eggs - 4 item
• vanilla - 2 tsp
• salt - 1 tsp
• flour - 2 c
• baking powder - 1 tsp
• baking soda - 2 tsp
• pumpkin - 2 c
• cooking oil - 3/4 c
• raisins - 1 c
• pecans - 1 c
• allspice - 1 tsp
• small can crushed pineapple, drained - 1 item

How to make pumpkin cake:

Mix together oil and sugar. Sift together next 6 ingredients. Mix dry ingredients with pumpkin, adding eggs one at a time and beating well after each. Add vanilla, pecans, raisins and pineapple. Mix all ingredients together and pour into large tube cake pan. Bake at 325° about 1 hour or until toothpick comes out clean. Cool and frost with cream cheese frosting or eat plain.
