  • sugar - 2 c
  • cinnamon - 3 tsp
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • stick margarine - 1 item
  • egg yolks - 3 item
  • eggs, beaten - 4 item
  • pumpkin - 2 c
  • self-rising flour - 3 c
  • pecans - 1 c
  • Crisco oil
  • can flaked coconut - 1 item
  • Blend eggs and sugar together; add pumpkin and oil

How to make pumpkin cake:

Sift flour and cinnamon together. Blend eggs and sugar together; add pumpkin and oil. Blend and then add flour and nuts. Preheat oven to 350° and bake 1 hour.Coconut and Pecan Icing:1 c. evaporated milk1 c. sugar3 egg yolks1 stick margarine1 tsp. vanilla1 can flaked coconut1 c. chopped pecans Combine your milk, sugar, egg yolks, margarine and vanilla in a saucepan. Cook over medium heat and stir constantly until thick or about 12 minutes. Remove from heat and add cup of coconut and nuts; spread on cake when cool.
