Ingredients/Components
- sugar - 2 c
- cinnamon - 3 tsp
- vanilla - 1 tsp
- chopped pecans - 1 c
- stick margarine - 1 item
- egg yolks - 3 item
- eggs, beaten - 4 item
- pumpkin - 2 c
- self-rising flour - 3 c
- pecans - 1 c
- Crisco oil
- can flaked coconut - 1 item
- Blend eggs and sugar together; add pumpkin and oil
How to make pumpkin cake:
Sift flour and cinnamon together. Blend eggs and sugar together; add pumpkin and oil. Blend and then add flour and nuts. Preheat oven to 350° and bake 1 hour.Coconut and Pecan Icing:1 c. evaporated milk1 c. sugar3 egg yolks1 stick margarine1 tsp. vanilla1 can flaked coconut1 c. chopped pecans Combine your milk, sugar, egg yolks, margarine and vanilla in a saucepan. Cook over medium heat and stir constantly until thick or about 12 minutes. Remove from heat and add cup of coconut and nuts; spread on cake when cool.Recipe categories: Desserts, Cakes, Vegetables.
