Ingredients/Components

  • sugar - 1 c
  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour
  • pumpkin - 1 c
  • ginger - 1 tsp
  • cooking oil - 3/4 c
  • margarine - 1/4 c
  • Frosting:1 egg
  • each: baking soda and powder - 1 tsp
  • confectioners sugar I use less - 1 pkg

How to make pumpkin cake:

For 13 x 9-inch pan:2 1/4 c. flour2 tsp. cinnamon3/4 tsp. salt1 1/2 tsp. each: baking soda and powder1 tsp. ginger1 1/2 c. sugar3 eggs1 1/2 c. cooking oil1 1/2 c. pumpkin Frosting:1 egg1/4 c. margarine1 pkg. confectioners sugar (I use less)1 tsp. vanilla Combine all ingredients and bake in deep ungreased 7-inch tube pan or 13 x 9-inch pan. Cool 10 minutes. Run knife around edge. Cool more before turning from pan.

For frosting: Combine 1 egg, margarine, confectioners sugar and vanilla. Mix well.
