Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour
- pumpkin - 1 c
- ginger - 1 tsp
- cooking oil - 3/4 c
- margarine - 1/4 c
- Frosting:1 egg
- each: baking soda and powder - 1 tsp
- confectioners sugar I use less - 1 pkg
How to make pumpkin cake:
For 13 x 9-inch pan:2 1/4 c. flour2 tsp. cinnamon3/4 tsp. salt1 1/2 tsp. each: baking soda and powder1 tsp. ginger1 1/2 c. sugar3 eggs1 1/2 c. cooking oil1 1/2 c. pumpkin Frosting:1 egg1/4 c. margarine1 pkg. confectioners sugar (I use less)1 tsp. vanilla Combine all ingredients and bake in deep ungreased 7-inch tube pan or 13 x 9-inch pan. Cool 10 minutes. Run knife around edge. Cool more before turning from pan.For frosting: Combine 1 egg, margarine, confectioners sugar and vanilla. Mix well.
