Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • eggs - 4 item
  • salt
  • flour
  • water - 2/3 c
  • baking powder - 1/2 tsp
  • baking soda - 2 tsp
  • shortening - 2/3 c
  • raisins optional - 2/3 c
  • ground cloves - 1 tsp
  • can pumpkin - 1 oz
  • coarsely chopped nuts optional - 2/3 c

How to make pumpkin bread:

Heat oven to 350°. Grease bottoms only of 2 loaf pans, 9 x 5 x 3-inches. Mix shortening and sugar in large bowl. Add eggs, pumpkin and water. Blend in flour, baking soda, salt, baking powder, cinnamon and cloves. Stir in nuts and raisins (optional). Pour into pans. Bake until wooden pick inserted in center comes out clean, about 1 hour and 10 minutes. Cool slightly. Loosen sides of loaves from pans; remove. Cool completely before slicing. To store, wrap and refrigerate no longer than 10 days.
