Ingredients/Components

butter - 3/4 c
sugar - 1 c
eggs - 2 item
molasses - 2 Tbsp
sifted cake flour
cinnamon - 1 tsp
cloves - 1 tsp
nutmeg - 1 tsp
baking powder - 1 tsp
baking soda - 1 tsp
salt - 1/2 tsp
buttermilk - 1 c
cornstarch - 3 Tbsp
egg yolk - 1 item
grated rind and juice of 1 lemon
Add eggs and molasses; beat thoroughly
cream of tartar - 1/2 tsp
hot water - 1/3 c
egg whites - 2 item
vanilla - 3/4 tsp
almond extract - 3/4 tsp

How to make prince of wales cake:

Cream the butter and sugar until fluffy. Add eggs and molasses; beat thoroughly. Sift flour with spices, baking powder, soda and salt. Add dry ingredients to creamed mixture alternately in thirds with buttermilk, beating smooth after each addition. Grease two 8-inch cake pans. Pour batter in pans. Bake at 375° (you may have to adjust oven heat to 350°) for 30 minutes. Take layers out of pans and cool thoroughly on cake racks. Assemble layers together with Lemon Filling and frost with Boiled Icing.

Lemon Filling:Boiled Icing:1 c. sugar1/2 tsp. cream of tartar1/3 c. hot water2 egg whites3/4 tsp. vanilla3/4 tsp. almond extract Filling: Combine sugar, cornstarch and salt in heavy saucepan. Stir in egg yolk and rind. Add water to lemon juice to make 1 cup. Stir into sugar mixture and cook, stirring constantly, until thick and clear. Stir in butter. Cool to room temperature.

Icing: Blend thoroughly the sugar, cream of tartar and water in heavy saucepan. Cook over direct heat, stirring until candy thermometer reaches 236°. Beat egg whites until stiff. Pour hot syrup in fine stream over egg whites, beating constantly. Continue to beat until icing holds stiff peaks. Beat in flavorings.

Note: You can substitute a different icing recipe if you wish. Cake is delicious.
