Pride of iowa cookies

Ingredients/Components

• eggs - 2 item
• vanilla - 1 tsp
• salt - 1/2 tsp
• chopped nuts - 1/2 c
• flour - 2 c
• brown sugar - 1 c
• coconut - 1 c
• soda - 1 tsp
• baking powder - 1 tsp
• shortening - 1 c
• white sugar - 1 c
• quick oatmeal - 3 c

How to make pride of iowa cookies:

Blend sugars and shortening; add eggs. Sift dry ingredients together; add to first mixture. Stir in vanilla, coconut, oats and nuts. Mix well and drop by teaspoonfuls on greased cookie sheet. Flatten with bottom of glass. Bake in 375° oven until light brown, about 8 minutes. Makes 5 dozen.
