Praline sweet potatoes
Ingredients/Components
- medium sweet potatoes - 8 item
- sugar - 1/4 c
- can pecans - 1 oz
- butter or margarine - 1 item
- milk - 1/2 c
- salt
How to make praline sweet potatoes:
About an hour before serving: Peel sweet potatoes. Cut each potato crosswise into thirds. In an 8-quart saucepot, cover potatoes to boiling. Reduce heat; cover and simmer for 20 to 25 minutes, or until tender. Drain; return to pot.Meanwhile, in 1-quart saucepan, heat sugar and 1/4 cup of water until sugar dissolves. Increase heat and boil rapidly without stirring until syrup turns a light golden brown. Stir in pecans and 2 tablespoons of butter. Spread pecan mixture in a thin layer on a cookie sheet. To the potatoes, add milk, salt and 3 tablespoons butter. Mash potatoes until almost smooth; heat through.
To Serve: Spoon the potatoes into a bowl. Break pecan mixture into small pieces; sprinkle on top of sweet potatoes.
