Potato salad for a crowd

Ingredients/Components

• salt
• vinegar - 1/2 c
• mayonnaise - 2 c
• potatoes - 15 lb
• hard-cooked eggs, chopped - 12 item
• chopped parsley - 3/4 c
• large onion, chopped - 1 item
• celery, chopped - 4 c
• Italian-style dressing seasoned oil and vinegar - 2 c

How to make potato salad for a crowd:

Cook potatoes with skins on until tender. Cool slightly; remove skins. Cube potatoes. Combine dressing, salt and vinegar. Pour over warm potatoes. Mix gently, then let stand until cold. Add remaining ingredients; mix gently. Chill at least an hour (overnight is better), then serve.

Makes 6 1/2 quarts (about 50 servings).
