Potato salad for a crowd
Ingredients/Components
- salt
- vinegar - 1/2 c
- mayonnaise - 2 c
- potatoes - 15 lb
- hard-cooked eggs, chopped - 12 item
- chopped parsley - 3/4 c
- large onion, chopped - 1 item
- celery, chopped - 4 c
- Italian-style dressing seasoned oil and vinegar - 2 c
How to make potato salad for a crowd:
Cook potatoes with skins on until tender. Cool slightly; remove skins. Cube potatoes. Combine dressing, salt and vinegar. Pour over warm potatoes. Mix gently, then let stand until cold. Add remaining ingredients; mix gently. Chill at least an hour (overnight is better), then serve.Makes 6 1/2 quarts (about 50 servings).
