Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- salt - 1 item
- flour - 2 Tbsp
- water - 3/4 c
- pepper - 1 item
- salad dressing - 1/2 c
- onion, chopped - 1/4 c
- apple cider vinegar - 1/3 c
- celery, chopped - 1/2 c
- sweet pickle relish - 1/2 c
- bacon, fried
- eggs, boiled and chopped - 5 item
- medium potatoes, cooked - 10 item
How to make potato salad:
Dressing:1/2 lb. bacon, fried1 c. sugar2 Tbsp. flour2 eggs1/3 c. apple cider vinegar3/4 c. water1/2 c. salad dressing Dressing: Fry bacon; drain grease and dispose of it. Crumble bacon into small pieces in pan. Mix sugar and flour together. Add the eggs to the sugar mixture; beat slowly. Stir in apple cider vinegar and water; pour in bacon pan (do not use grease). Cook until mixture bubbles. Cool thoroughly and add salad dressing. Stir until well blended.Salad: Peel potatoes after boiling and slice. Add celery that has been finely chopped, sweet pickle relish, chopped boiled eggs, chopped onion and salt and pepper to taste. Pour dressing over these ingredients; mix thoroughly. Refrigerate. Can garnish with parsley and paprika sprinkled on top.
