Ingredients/Components
- eggs - 2 item
- vegetable oil - 1 Tbsp
- salt and pepper - 1 item
- baking potatoes - 3 item
- medium onion, grated - 1/2 item
- matzoh meal - 2 Tbsp
How to make potato pancakes:
Wash, peel and grate potatoes on coarse blade of 4 sided grater (you can grate with skins on and may like it better). In a medium bowl, lightly beat the eggs and add all else. Grease a large nonstick skillet with oil and heat over medium-high heat. Spoon heaping tablespoon of the mixture onto the skillet and flatten with a spatula. Cook until golden brown on one side about 2 to 3 minutes, then turn over and do the same on the other side. Drain on paper toweling and serve quickly with apple sauce.
