  • dairy sour cream - 1 item
  • vegetable oil - 1 Tbsp
  • shredded Cheddar cheese
  • salt and pepper - 1 item
  • chopped green onions - 2 Tbsp
  • sliced ripe olives optional - 1 item
  • medium tomato, diced - 1 item
  • guacamole optional - 1 item
  • prepared salsa - 1 item
  • each Washington Russet potatoes - 2 (8
  • each: diced green chilies - 1/4 c

How to make potato nachos:

Slice potatoes 1/4-inch thick. Rinse and drain thoroughly on paper towels. Brush baking sheet and potato slices with oil. Place slices in a single layer on baking sheet. Season with salt and pepper. Bake at 425° for 10 minutes. Top each slice with cheese, tomato, chilies, olives and green onions. Bake 5 to 7 minutes longer, until potatoes are tender and cheese is melted. Serve with salsa, sour cream and guacamole. Makes 6 to 8 servings.
