Potato nachos
Ingredients/Components
- dairy sour cream - 1 item
- vegetable oil - 1 Tbsp
- shredded Cheddar cheese
- salt and pepper - 1 item
- chopped green onions - 2 Tbsp
- sliced ripe olives optional - 1 item
- medium tomato, diced - 1 item
- guacamole optional - 1 item
- prepared salsa - 1 item
- each Washington Russet potatoes - 2 (8
- each: diced green chilies - 1/4 c
How to make potato nachos:
Slice potatoes 1/4-inch thick. Rinse and drain thoroughly on paper towels. Brush baking sheet and potato slices with oil. Place slices in a single layer on baking sheet. Season with salt and pepper. Bake at 425° for 10 minutes. Top each slice with cheese, tomato, chilies, olives and green onions. Bake 5 to 7 minutes longer, until potatoes are tender and cheese is melted.
