Potato moussaka



  • cinnamon - 1/2 tsp
  • salt - 1 tsp
  • flour - 1/2 c
  • butter - 3 Tbsp
  • nutmeg - 1/4 tsp
  • egg yolks - 2 item
  • pepper - 1/4 tsp
  • grated Parmesan cheese - 1 c
  • dry white wine - 1/2 c
  • olive oil - 2 Tbsp
  • cloves garlic, chopped - 2 item
  • red potatoes - 2 lb
  • can tomatoes, drained and chopped - 1 oz
  • leaf oregano - 1/2 tsp
  • leaf thyme - 1/2 tsp
  • lean ground beef or lamb
  • Brush both sides with oil and place in single layer on cookie sheets
  • Add seasonings and wine

How to make potato moussaka:

Slice potatoes 1/4-inch thick. Brush both sides with oil and place in single layer on cookie sheets. Bake 7 minutes in 400° oven. Turn. Brush with oil and bake 8 more minutes or until tender.Meat Filling:2 c. chopped onion1 Tbsp. olive oil2 cloves garlic, chopped1 1/2 lb. lean ground beef or lamb1/2 tsp. cinnamon1/2 tsp. leaf oregano1/2 tsp. leaf thyme1 tsp. salt1/4 tsp. pepper1/2 c. dry white wine1 (35 oz.) can tomatoes, drained and chopped Saute onion, garlic and meat in oil until onion is soft. Add seasonings and wine. Cook until wine evaporates, about 5 minutes. Add tomatoes. Cook to blend flavors about 5 minutes.White Sauce:1 qt. milk3 Tbsp. butter2 Tbsp. olive oil1/2 c. flour1 tsp. salt1/4 tsp. pepper1/4 tsp. nutmeg2 egg yolks1 c. grated Parmesan cheese Heat milk until bubbles form around edge, about 3 minutes in microwave. Melt butter in olive oil in saucepan over medium heat. Stir in flour and cook until bubbly. Add milk all at once, whisking or stirring constantly. Add seasonings. Stir over low heat until thick. Simmer 2 to 3 minutes. Slowly whisk about 1 cup of hot sauce into 2 beaten egg yolks. Whisk back into remaining sauce in pan. Save 2 tablespoons of the cheese for top. Stir remaining cheese into sauce.

Grease 13 x 9-inch pan. Sprinkle bottom with bread crumbs. Arrange potato slices in pan, placing large slices in first. There will be about 2 layers. Spoon meat filling over potatoes. Pour White Sauce over top. Sprinkle with reserved Parmesan cheese. Bake
