Ingredients/Components
- eggs, beaten - 2 item
- garlic clove, minced - 1 item
- onion - 1 item
- shredded cheddar cheese
- teaspoons salt - 2 item
- tablespoons vegetable oil - 3 item
- medium russet potatoes, peeled - 6 item
- to 3 carrots, peeled - 2 item
- cup powdered nonfat milk - 3/4 item
- cup whole-grain bread crumbs - 1/4 item
- cup plain yogurt or sour cream - 1 item
- Fresh chives for garnish, optional - 1 item
How to make potato kugel:
Topping:1 cup (4 oz.) shredded cheddar cheese1 cup plain yogurt or sour cream Fresh chives for garnish, optional Grate potatoes, carrots and onion. Drain off liquid. Gradually stir in powdered milk. Add remaining ingredients except topping. Spread into greased 7 X 11 baking dish. Bake at 350 for 40 60 minutes. When kugel is nearly done it will test dry like a cake and the edges will be brown. Sprinkle with cheese and return to oven for 5 more minutes until cheese melts. Remove from oven, cut into 2 inch squares. Top each square with 2 tablespoons yogurt or sour cream.
