Potato dumplings
Ingredients/Components
- salt - 1 tsp
- flour
- egg - 1 item
- medium potatoes - 2 item
How to make potato dumplings:
Grate the potatoes. Add salt, egg and flour. Mix well. If dough is too stiff, add a little water (1/4 cup more or less). Drop small portions from tip of spoon into boiling water. Cook from 7 to 10 minutes. Drain. Rinse with cold water. Serve with Cottage Cheese, Cabbage, Sauerkraut or Cheese.Cottage Cheese: Brown 1/4 cup butter. Pour over dumplings. Crumble dry cottage cheese over the buttered dumplings and add salt. Mix well together and serve.
Cabbage: Chop 1 small onion, browning in fat or drippings. Add finely chopped cabbage with salt and paprika. Fry slowly, covered, until done (about 20 minutes). Add dumplings and mix well. Serve hot.
Sauerkraut: Brown 6 slices chopped bacon. Add 1/4 pound butter or margarine. Add 2 cups drained and washed sauerkraut. Mix together with dumplings and serve hot.
Cheese: Brown 6 slices chopped bacon. Add 1/4 pound butter or margarine. After melted thoroughly, add 1 1/2 cups grated cheese (American, Cheddar or favorite sharp cheese works best). After cheese is melted, pour over dumplings. Mix well and serve hot.
