Potato-cheese soup
Ingredients/Components
- medium potatoes, peeled - 4 item
- medium onion, sliced - 1 item
- boiling water - 4 c
- summer sausage, diced - 1/3 c
- thyme leaves - 1/2 tsp
- marjoram - 1/2 tsp
- salt
- pepper - 1 item
- butter - 2 Tbsp
- Parmesan - 1 Tbsp
- grated sharp cheese - 1/2 c
How to make potato-cheese soup:
Cut potatoes into halves. Cook with onion in 2 cups boiling water until tender; let stand. Mash potatoes. Add sausage, spices, sharp cheeses and remaining boiling water. Simmer 10 minutes. Sprinkle with Parmesan just before serving.Recipe categories: Potato, Cheese, Soups & stews.
