  • milk - 2 c
  • salt
  • margarine - 2 Tbsp
  • pepper - 1/4 tsp
  • chicken broth - 3 c
  • onion, chopped - 1/3 item
  • celery, chopped - 1/3 item
  • Cheddar cheese, shredded - 8 oz
  • potatoes, peeled and diced - 4 c

How to make potato cheese soup:

In a large saucepan, melt margarine over medium heat. Saute celery and onion until tender. Add potatoes and broth. Cover and simmer until potatoes are tender (about 12 minutes). Puree potato mixture in a blender. Return to saucepan, stir in milk and seasoning. Add cheese and heat only until melted. Makes 8 servings.
