Ingredients/Components

  • salt - 1/4 tsp
  • flour - 1/4 c
  • butter - 1/4 c
  • carton sour cream - 1 oz
  • light cream - 1/3 c
  • butter, melted - 1/2 c
  • chicken broth - 1 c
  • dash of pepper - 1 item
  • finely chopped onion - 1/3 c
  • finely chopped celery - 1/2 c
  • breadcrumbs - 1/2 c
  • grated Cheddar - 1 c

How to make potato casserole au gratin:

Boil potatoes with jackets on until almost tender, about 15 minutes. Drain and let cool. Melt butter in saucepan. Stir in flour. Slowly add chicken broth and cook, stirring constantly, until thickened and bubbly. Stir in cream, salt and pepper. Remove from heat. Cover and let cool. Peel and grate potatoes. Combine with celery, onion, cheese, melted butter and salt. Stir sour cream into cooled cream sauce, then fold sauce into grated potato mixture. Turn into 9 x 13-inch shallow baking dish. Sprinkle with breadcrumbs. Bake at 325° for 1 hour. Makes 10 to 12 servings.
