  • powdered sugar - 1 item
  • peanut butter - 1 item
  • mashed potatoes - 1 item
  • walnut or vanilla extract optional - 1 item

How to make potato candy:

Put mashed potatoes in medium to large size mixing bowl (one small to medium potato). At this point, you would add the walnut or vanilla extract. Add powdered sugar, a little at a time, and mix well after each addition. Mixture will at first, start getting runnier. After several additions of powdered sugar until mixture is about the consistency of bread or biscuit dough, approximately a 2 pound bag or box, or just under.

Roll dough out onto floured aluminum foil or waxed paper. Roll out fairly thin, but thicker than pie crust (approximately 1/8 to 1/4-inch). Spread with creamy or chunky peanut butter, and if desired, chopped nuts. Then roll mixture up in the manner of cinnamon rolls and wrap in foil or waxed paper. Chill in refrigerator until slightly hardened. Remove, unwrap candy, slice as thick or thin as you want, and enjoy!
