Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • vanilla - 1 Tbsp
  • milk - 1 c
  • salt - 1/2 tsp
  • cocoa - 2 Tbsp
  • baking powder - 3 tsp
  • sifted cake flour - 2 c
  • pecans - 1 c
  • butter or oleo - 1 c
  • allspice - 1/2 tsp
  • mashed potatoes - 1 c
  • eggs, separated add yolks, beat whites - 4 item

How to make potato cake:

Cream butter and sugar together; add well-beaten egg yolks. Add mashed potatoes, then add milk and dry ingredients alternately. Beat egg whites until very stiff and fold into mixture carefully. Pour into three (9-inch) cake pans, greased and floured. Bake 20 minutes in a 350° oven. Frost with your favorite chocolate icing.
