Potato cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla - 1 Tbsp
- milk - 1 c
- salt - 1/2 tsp
- cocoa - 2 Tbsp
- baking powder - 3 tsp
- sifted cake flour - 2 c
- pecans - 1 c
- butter or oleo - 1 c
- allspice - 1/2 tsp
- mashed potatoes - 1 c
- eggs, separated add yolks, beat whites - 4 item
How to make potato cake:
Cream butter and sugar together; add well-beaten egg yolks. Add mashed potatoes, then add milk and dry ingredients alternately. Beat egg whites until very stiff and fold into mixture carefully. Pour into three (9-inch) cake pans, greased and floured. Bake 20 minutes in a 350° oven. Frost with your favorite chocolate icing.Old family recipe passed down from my grandmother.
