  • crushed Ritz crackers - 30 item
  • egg whites, beaten stiff - 3 item
  • vanilla - 1 tsp
  • plus 2 Tbsp - 1 c
  • finely chopped nuts - 1 item
  • whipping cream
  • powdered sugar - 2 Tbsp
  • small can coconut - 1 item

How to make possum pie:

Filling:1/2 pt. whipping cream2 Tbsp. powdered sugar1 small can coconut Grease pie plate. To the beaten egg whites add sugar, vanilla, crackers and nuts; mix well. Spread mixture in pie plate to form crust. Bake 25 minutes at 325°. Cool thoroughly. Whip the whipping cream until stiff. Add the sugar, mixing well. Spread this mixture over the crust. Sprinkle the top of the pie with the coconut. Let the pie stand overnight in the refrigerator.
