Ingredients/Components
- crushed Ritz crackers - 30 item
- egg whites, beaten stiff - 3 item
- vanilla - 1 tsp
- plus 2 Tbsp - 1 c
- finely chopped nuts - 1 item
- whipping cream
- powdered sugar - 2 Tbsp
- small can coconut - 1 item
How to make possum pie:
Filling:1/2 pt. whipping cream2 Tbsp. powdered sugar1 small can coconut Grease pie plate. To the beaten egg whites add sugar, vanilla, crackers and nuts; mix well. Spread mixture in pie plate to form crust. Bake 25 minutes at 325°. Cool thoroughly. Whip the whipping cream until stiff. Add the sugar, mixing well. Spread this mixture over the crust.
