  • pepper - 1/2 tsp
  • chopped onion - 1 c
  • sliced zucchini - 1 c
  • minced garlic - 2 tsp
  • sliced celery - 1 c
  • anise seed - 1 tsp
  • pitted black olives - 1 c
  • large potatoes, cut into 1/2-inch cubes - 3 item
  • mild Italian sausage - 1 lb
  • spicy Italian sausage - 1 lb
  • large can whole peeled tomatoes, undrained - 1 to

How to make portuguese sausage soup:

Remove casings from sausages. Crumble meat into Dutch oven or heavy kettle and saute until browned. Drain off fat. Add all remaining ingredients to sausage. Bring to a boil, then lower heat and simmer, covered, for 30 minutes or until all vegetables are tender. Serves 8.
