  • oleo - 3 Tbsp
  • pepper - 1/4 tsp
  • can chicken broth - 1 to
  • pork chops - 6 item
  • medium sliced onion - 1 item
  • thinly sliced peeled potatoes - 6 c
  • additional salt and pepper - 1 item
  • paprika and chopped fresh parsley - 1 item

How to make pork chops with scalloped potatoes:

In a saucepan, melt oleo. Stir in flour, salt and pepper. Add chicken broth. Cook and stir constantly until mixture boils. Cook 1 minute. Remove from heat and set aside. In a skillet, brown pork chops in oil. Season to taste with additional salt and pepper if desired. In a greased 9 x 13 x 2-inch baking dish, layer potatoes and onion. Pour broth over the potatoes and onion. Place pork chops on top. Cover and bake at 350° for 1 hour. Uncover and bake 1/2 hour longer or until potatoes are tender.
