Pork chop casserole
Ingredients/Components
- water - 3/4 c
- chopped onion - 1/4 c
- dash of pepper - 1 item
- grated orange rind - 1 tsp
- Minute rice - 3/4 c
- each - 4 loin
- unsalted butter - 1 2
- diced orange sections - 1/2 c
- dash of savory - 1 item
- diced, peeled tart apple - 1/2 c
How to make pork chop casserole:
Trim excess fat from pork chops and brown quickly in butter in a skillet. Remove chops from pan. Saute onion in pan drippings. Combine remaining ingredients and the onion in a lightly greased, shallow casserole; mix well. Arrange chops on rice mixture. Cover and bake at 350° for about 45 minutes or until chops are tender. Makes 4 servings.Count each serving as 2 ounces of meat, 1 starch and 1 fruit serving worth 2 points of potassium.
