Porcupine meatballs
Ingredients/Components
- salt - 1 tsp
- egg, slightly beaten - 1 item
- shortening - 2 Tbsp
- chopped onion - 1/4 c
- prepared mustard - 1 tsp
- ground beef - 1 lb
- can condensed tomato soup - 1 3/4
- soup can water - 1/2 item
- precooked rice - 1 c
How to make porcupine meatballs:
Mix 1/4 cup soup with beef, rice, egg, onion and salt. Shape into 16 meatballs. Brown meatballs in shortening. Pour off fat. Blend remaining soup, water and mustard. Pour over meatballs. Cover and simmer for 20 minutes. Makes 4 servings.Recipe categories: Vegetables, Ground beef, Beef.
