Polynesian chicken salad
Ingredients/Components
- sour cream - 1/2 c
- shredded carrots - 1/4 c
- curry powder - 1/2 tsp
- salt and pepper to taste - 1 item
- mayonnaise - 1/2 3/4
- diced celery
- slivered almonds - 1/2 c
- fresh lemon juice - 1 tsp
- diced pineapple
- cooked chicken, cut in small pieces - 2 3
How to make polynesian chicken salad:
Cook chicken in salt water until tender. Cool. Drain and cut in small pieces. Combine mayonnaise, sour cream, curry powder, salt and pepper. Fold in chicken, celery, pineapple, carrots and almonds.
