Polynesian chicken



  • cornstarch - 1/2 c
  • sherry optional - 1 c
  • bean sprouts - 3 c
  • soy sauce to taste - 1 item
  • crushed pineapple - 2 c
  • large onions, sliced - 3 item
  • bamboo shoots - 2 c
  • oil for sauteing - 1 item
  • chicken, disjointed and cut up - 5 lb

How to make polynesian chicken:

Fry chicken pieces in oil until brown. Saute onions in same pan; add sherry (or other liquid). Stir, scraping brown bits loose and blending into liquid to combine with chicken in pan. Add crushed pineapple and water or stock and braise 25 minutes. Add bean sprouts and bamboo shoots. Thicken with cornstarch. Serves 20.
