Poached chicken
Ingredients/Components
- salt - 1 tsp
- water
- small onion, stuck with 2 cloves - 1 item
- each or 1 broiler fryer 2 1/2 lb - 2 whole
- parsley sprigs or celery tops - 2 item
How to make poached chicken:
In medium size saucepan or Dutch oven heat chicken and water to a boil; skim off foam. Add salt, onion and parsley. Reduce heat; cover and simmer 45 minutes or until chicken is tender when pierced. Cool in broth. Lift out chicken. Discard skin; remove meat from bones in large pieces. Strain broth and save for soups or sauces. Makes about 1 pound or 2 1/2 cups cubes or strips of cooked chicken.Recipe categories: Chicken, Main dish, Poultry.
