Pizza potatoes



  • shredded Mozzarella cheese - 1/4 c
  • large baking potatoes - 3 item
  • frozen corn kernels, thawed - 1 c
  • jar prepared spaghetti sauce - 1 oz
  • very lean ground beef - 1/2 lb

How to make pizza potatoes:

Wash potatoes. Pierce potatoes with fork. Microwave on full power for 10 to 13 minutes or until tender, turning once halfway through cooking. Wrap in clean kitchen towel to keep warm.

Place ground beef in hard plastic colander set in microwave-safe dish. Microwave on full power for 4 to 5 minutes or until meat is no longer pink, stirring once and breaking meat into small pieces halfway through cooking; drain.

In a 1 1/2-quart microwave-safe dish, combine drained ground beef, spaghetti sauce and corn. Microwave on full power for 4 to 5 minutes or until very hot, stirring once halfway through cooking.

To serve, cut potatoes in half lengthwise. Top with meat mixture and cheese. Serves 6.
