  • sugar
  • eggs - 4 item
  • vanilla
  • milk
  • salt - 1 tsp
  • chopped nuts - 3/4 item
  • flour
  • oil - 1/2 c
  • baking powder - 3 tsp
  • shortening - 2/3 c
  • Cool Whip
  • club soda - 1 c
  • instant pistachio pudding mix - 2 pkg
  • Add vanilla and eggs

How to make pistachio cake:

Cream sugar and shortening, add oil. Add vanilla and eggs. Alternate milk, soda and all dry ingredients. Can add 3/4 cup of chopped nuts. Bake in either tube pan for 40 minutes at 350°, 8 x 12-inch pan for 40 minutes at 350° or three layer pans for 35 minutes at 350°.Pistachio Icing:1 box instant pistachio pudding1 c. milk3 1/2 c. Cool Whip Beat together and serve as icing.
