  • salt - 1/2 tsp
  • ground salted peanuts - 2/3 c
  • unseasoned, mashed potatoes - 1 c
  • powdered sugar amount may vary according to water in the potatoes - 2 lb
  • dipping chocolate or semi-sweet chocolate - 1 lb

How to make pioneer potato candy:

Combine potatoes, salt and vanilla in a 4-quart mixing bowl. Sift powdered sugar over potatoes. Cover with damp cloth and set until chilled. Shape into small balls. Dip into melted chocolate. Roll into nuts. Chill until firm.
