  • sugar - 1/4 c
  • eggs - 2 item
  • vanilla - 1/2 tsp
  • milk - 2 c
  • salt - 1/2 tsp
  • butter - 1/4 c
  • cornstarch
  • water - 2 c
  • dash of salt - 1 item
  • margarine - 3 Tbsp
  • lemon juice - 1 Tbsp
  • grated lemon peel - 1 Tbsp
  • day old bread, crusts removed and cut in 1/2-inch cubes - 2 c

How to make pioneer bread pudding:

Lemon Sauce:2 Tbsp. cornstarch2 c. water1/4 c. butter1/2 tsp. salt1 Tbsp. grated lemon peel1 Tbsp. lemon juice1 c. sugar Place bread in buttered 1-quart baking dish. Mix and heat milk, sugar and butter in microwave or stovetop just enough to dissolve sugar and melt butter. Beat eggs slightly, adding salt. Stir into warm milk and add vanilla. Pour over bread cubes. Set baking dish in pan of hot water and bake in a 350° oven 1 hour or until knife comes out clean. Serve with Lemon Sauce or plain cream.

Lemon Sauce: Combine sugar, cornstarch and salt in saucepan. Stir in water and lemon peel. Boil for 1 minute. Remove from heat and stir in butter and lemon juice.
