Ingredients/Components

  • sugar - 1/2 c
  • cinnamon - 1 tsp
  • eggs - 3 item
  • salt - 1 tsp
  • flour - 4 4
  • brown sugar - 2 c
  • water - 1 c
  • soda - 1 tsp
  • shortening - 1 c
  • nuts, chopped fine - 1/2 c
  • dates or raisins, ground

How to make pinwheel cookies:

Filling:1 1/2 c. dates or raisins, ground1 c. sugar1 c. water1/2 c. nuts, chopped fine Cream together shortening and sugars. Add eggs and beat until fluffy. Sift flour, salt, soda and cinnamon. Add dry ingredients to creamed mixture and beat until smooth. Divide dough in two and chill in refrigerator overnight.

Combine the fruit, sugar and water and cook until thickened, stirring constantly. Remove from heat and add the nuts. Cool. Roll each section of dough 1/4 inch thick and spread with filling. Roll up, jelly roll fashion and chill thoroughly in refrigerator. Slice in rings, 1/8-inch thick and place on greased cookie sheets. Bake at 375° until golden brown. Makes 3 1/2 dozen.
