  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 3 c
  • oil - 1 c
  • baking powder - 1/4 tsp
  • baking soda - 2 tsp
  • chopped walnuts - 1 c
  • raisins - 1 c
  • shredded zucchini - 2 c
  • can crushed pineapple, well drained - 1 1/4

How to make pineapple zucchini bread:

Beat first 4 ingredients until thick. Stir in remaining ingredients gradually; blend well. Pour into 2 greased 5 x 9-inch loaf pans. Bake at 350° for 1 hour. Test with cake tester. It should come out clean.
