Pineapple zucchini bread
Ingredients/Components
- sugar - 2 c
- cinnamon
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 3 c
- nutmeg - 3/4 tsp
- baking powder - 1/2 tsp
- baking soda - 2 tsp
- raisins optional - 1 c
- salad oil - 1 c
- well drained, crushed pineapple - 1 c
How to make pineapple zucchini bread:
Beat eggs, oil, sugar and vanilla until thick and foamy. Stir in pineapple and zucchini. Combine remaining ingredients, stirring gently (just enough to blend). Pour into two greased and floured loaf pans. Bake at 350° for about 1 hour (test center with toothpick). Cool on racks. Freezes very well.Recipe categories: Breads, Quick breads, Pineapple.
