Pineapple rice pudding
Ingredients/Components
- vanilla - 1 tsp
- boiling water
- raisins - 1/4 c
- ground cinnamon - 1/4 tsp
- skim milk - 1/2 c
- slivered almonds, toasted - 1/4 c
- whole wheat flour - 3 Tbsp
- can unsweetened crushed pineapple, drained reserve juice - 1 oz
- brown rice - 1/2 c
How to make pineapple rice pudding:
Add rice to boiling water; cover and reduce heat. Simmer 45 minutes. Add pineapple and milk; cook 15 minutes over low heat. Stir in raisins, sugar and cinnamon.
