Pineapple pecan cake
Ingredients/Components
- butter, softened
- sugar - 2 c
- eggs - 2 item
- chopped pecans - 1 c
- pkg - 1 oz
- vanilla extract - 1 tsp
- flour - 2 c
- confectioners sugar
- baking soda - 2 tsp
- can crushed pineapple undrained - 1 oz
How to make pineapple pecan cake:
Frosting:1/2 c. butter, softened1 (8 oz.) pkg. cream cheese, softened1 1/2 c. confectioners sugar1 tsp. vanilla extract In a mixing bowl, combine the first 5 ingredients; mix well. Stir in pecans. Pour into an ungreased 13 x 9 x 2-inch baking pan. Bake at 350° for 40 to 45 minutes or until a toothpick inserted near the center comes out clean. Cool completely.In a mixing bowl, combine all frosting ingredients; beat until smooth. Frost cake. Yields 16 to 20 servings.
