How to make pineapple cookies:

In large bowl of electric mixer combine sugars and butter. Beat until well mixed. Add eggs, one at a time. Continue beating until mixture is creamy. Next, add flour, soda, baking powder, salt, vanilla, crushed pineapple and nuts and mix on medium speed for a minute or two. Do not overbeat. Drop by teaspoons on greased cookie sheet and bake for about 10 minutes or until lightly browned. Do not overbake. Bake at 375°. Place on cookie rack to cool.Frosting For Pineapple Cookies:1 stick margarine or butter1/4 c. milk1 c. light brown sugar2 c. confectioners sugar In heavy saucepan put margarine or butter, milk and light brown sugar and boil for a minute or two. Avoid stirring as it will crystalize the sugar. In a small bowl of Mixmaster put 2 cups of confectioners sugar; add the cooked syrup and beat on medium-low speed until mixture is smooth. Do not overbeat. You have to work fast when frosting the cookies. Drop frosting on cookie with teaspoon doing as many as you can and working fast. When frosting seems to be hardening, spread with knife.
