Pineapple coffee cake
Ingredients/Components
- sugar - 1/2 c
- vanilla - 1 tsp
- salt - 1/4 tsp
- flour
- brown sugar
- coconut - 1/2 c
- baking powder
- melted butter - 2 Tbsp
- egg - 1 item
- shortening - 1/3 c
- can crushed pineapple - 1 3/4
How to make pineapple coffee cake:
Topping:1/2 c. brown sugar2 Tbsp. melted butter1/2 c. coconut Cream shortening and sugar; add egg and vanilla. Drain pineapple reserving juice. Add water to make 1/2 cup. Sift dry ingredients and add to creamed mixture. Stir in reserved juice. Spread 1/2 mixture in greased and floured 9-inch square pan (8-inch may work better). Spread drained pineapple over this. Add remaining batter.Topping: Mix together the brown sugar and melted butter. Spread topping over cake. Sprinkle coconut over all. Bake at 350° about 30 minutes or until toothpick comes out clean.
