Pineapple chicken salad



  • can mandarin oranges - 1 oz
  • sliced fresh mushrooms - 1/2 c
  • chopped green pepper - 1/4 c
  • prepared mustard - 2 tsp
  • mayonnaise or salad dressing - 1/2 c
  • thinly sliced celery - 1/2 c
  • finely chopped onion - 2 Tbsp
  • can pineapple chunks or tidbits - 1 oz
  • cooked chicken, shredded - 2 c

How to make pineapple chicken salad:

Drain the pineapple and oranges; refrigerate overnight. Mix all ingredients, but fruit. Cover; refrigerate for several hours. Just before serving, add drained fruit. Serve on lettuce. Serves 6 to 10.
