Pineapple chicken salad
Ingredients/Components
- can mandarin oranges - 1 oz
- sliced fresh mushrooms - 1/2 c
- chopped green pepper - 1/4 c
- prepared mustard - 2 tsp
- mayonnaise or salad dressing - 1/2 c
- thinly sliced celery - 1/2 c
- finely chopped onion - 2 Tbsp
- can pineapple chunks or tidbits - 1 oz
- cooked chicken, shredded - 2 c
How to make pineapple chicken salad:
Drain the pineapple and oranges; refrigerate overnight. Mix all ingredients, but fruit. Cover; refrigerate for several hours. Just before serving, add drained fruit. Serve on lettuce. Serves 6 to 10.Recipe categories: Lunch/snacks, Salads, Main dish.
