Ingredients/Components

  • graham cracker crumbs
  • sugar
  • vanilla extract - 1 tsp
  • sour cream - 1 c
  • cornstarch - 2 Tbsp
  • water - 1/4 c
  • large eggs - 4 item
  • light brown sugar - 2 Tbsp
  • butter, melted - 6 Tbsp
  • ground cloves - 1/4 tsp
  • fresh lemon juice - 1 Tbsp
  • pecans, finely chopped - 3/4 c
  • grated rind of 1 lemon
  • Stir in butter
  • Add sugar and cornstarch; beat until smooth 3 minutes

How to make pineapple cheesecake:

In a bowl, mix crumbs, pecans, brown sugar and cloves. Stir in butter. Press over bottom and halfway up sides of 9-inch spring-form pan. Refrigerate.Filling:4 (8 oz.) pkg. cream cheese, softened1 1/2 c. sugar2 Tbsp. cornstarch4 large eggs grated rind of 1 lemon1 Tbsp. fresh lemon juice1 tsp. vanilla extract1 c. sour cream In bowl, beat cheese 1 minute. Add sugar and cornstarch; beat until smooth 3 minutes. Beat in eggs, one at a time. Beat in rind, juice and vanilla. Pour into crust. Bake at 350° for 55 to 60 minutes. Spread sour cream over top. Bake 15 minutes more. Run thin knife around edge of cake. Let cool in pan on rack. Cover and refrigerate overnight.Sauce:2 (8 oz.) cans pineapple, crushed in juice1/4 c. water1/4 c. sugar2 Tbsp. cornstarch Drain pineapple over saucepan. Stir in water, sugar and cornstarch to dissolve sugar. Boil until thickened 1 minute. Stir in pineapple. Let cool. Refrigerate until serving.
