Pineapple carrot raisin muffins
Ingredients/Components
- sugar - 1 c
- cinnamon - 1/2 tsp
- eggs - 2 item
- vanilla - 1 tsp
- baking powder - 2 tsp
- all-purpose flour - 2 c
- chopped walnuts - 1/2 c
- raisins - 1/2 c
- shredded carrots - 1/2 c
- ground ginger - 1/4 tsp
- margarine, melted - 1/2 c
- can crushed pineapple in juice - 1 oz
How to make pineapple carrot raisin muffins:
Preheat oven to 375°. In a large bowl, combine flour, sugar, baking powder and spices. Stir in carrots, raisins and nuts. In a small bowl, combine undrained pineapple, eggs and vanilla. Add liquid mixture to flour mixture. Stir just until moistened. Batter will be lumpy. Do not overmix. Stir in margarine. Spoon batter evenly into 12 greased 2 3/4-inch muffin cups. Bake 20 to 25 minutes or until golden brown. Remove to wire rack to cool. Makes 12 muffins.Recipe categories: Breads, Quick breads, Muffins.
