Ingredients/Components
- butter, softened - 3/4 c
- vanilla - 1 tsp
- granulated sugar - 1/2 c
- salt - 1/4 tsp
- flour
- baking powder - 1/2 tsp
- egg - 1 item
- chopped walnuts - 1 c
- raisins - 1 c
- brown sugar, packed - 1/2 c
- shredded carrots - 1 c
- ground cinnamon - 1 tsp
- ground ginger - 1/2 tsp
- cans crushed pineapple - 2 oz
How to make pineapple carrot cookies:
Drain pineapple (well). Cream butter and sugars. Beat in egg and vanilla. Beat in pineapple, carrots, nuts and raisins. Combine remaining ingredients. Beat into pineapple mixture until well blended. Drop by heaping tablespoon onto greased cookie sheet. Flatten tops with spoon. Bake in 375° oven for 15 to 20 minutes.
