  • baking soda - 2 tsp
  • boiling water - 1 c
  • stick butter - 1/2 item
  • powdered sugar - 1 c
  • margarine - 3 Tbsp
  • Equal - 6 pkg
  • cinnamon optional - 1/2 tsp
  • canned crushed pineapple with juice - 16 oz
  • 2 can crushed pineapple including juice
  • low-fat cottage cheese 1% - 2 lb
  • Bake in 350° oven for 35 to 40 minutes

How to make pineapple cake:

Mix thoroughly with wooden spoon. Bake in 350° oven for 35 to 40 minutes.Frosting:8 oz. cream cheese1 c. powdered sugar1/2 stick butter1 tsp. vanilla1 1/2 c. graham cracker crumbs3 Tbsp. margarine1/2 tsp. cinnamon (optional)1 (3 oz.) pkg. diet lemon or pineapple jello1 c. boiling water2 lb. low-fat cottage cheese (1%)6 pkg. Equal1/2 tsp. salt16 oz. canned crushed pineapple with juice2 Tbsp. water2 Tbsp. cornstarch Combine crumbs with margarine; press into two 9-inch pie pans. Bake at 350° for 8 minutes. Cool. Dissolve gelatin in boiling water; cool to lukewarm. Mix cheese, Equal and salt in the blender or food processor until smooth and creamy. Slowly add gelatin and blend well. Pour mixture in prepared crust. Chill until firm. Bring pineapple with juice, water and cornstarch to a boil, stirring constantly and let cool. If sweeter product is desired, add 6 to 8 packages of Equal to cooled pineapple mixture. Spread pineapple mixture on top of pie filling. Chill at least 1 hour.
