  • butter - 1/2 c
  • water - 1/2 c
  • oil - 1/4 c
  • flaked coconut - 1 c
  • rum - 1/3 c
  • whipped topping, thawed - 9 oz
  • can crushed pineapple in juice
  • Bacardi dark rum - 1/3 c
  • Beat 4 minutes at medium speed
  • yellow cake mix or white cake mix - 1 pkg
  • coconut cream or vanilla flavor instant pudding 4 oz - 1 pkg
  • coconut or vanilla flavor instant pudding 4 oz - 1 pkg

How to make pina colada cake and frosting:

Frosting:1 (8 oz.) can crushed pineapple in juice1 pkg. coconut or vanilla flavor instant pudding (4 oz.)1/3 c. rum9 oz. whipped topping, thawed1 c. flaked coconut Blend all cake ingredients in large bowl. Beat 4 minutes at medium speed. Pour into floured and greased pans. Bake 2 layers for 30 to 35 minutes or Bundt for 60 minutes at 350°.

Frosting: Beat pineapple, pudding and rum until well blended. Fold in whipped topping. Sprinkle coconut over cake.

Bundt Cake Version: Sprinkle chopped pecans or walnuts in bottom of prepared pan, then pour cake batter over it. Bake 60 minutes at 350°.Glaze For Bundt Cake:1 c. sugar1/2 c. butter1/2 c. rum Boil sugar and butter for 5 minutes, stirring constantly. Remove from heat and add rum. Bring back to a boil. Prick cake and spoon glaze over it.
