Ingredients/Components
- eggs - 4 item
- pkg - 1 oz
- water - 1/2 c
- oil - 1/4 c
- flaked coconut - 1 c
- white cake mix - 1 pkg
- dark rum - 1/3 c
- Cool Whip, softened - 8 oz
- Beat 4 minutes at medium speed
- dark rum use only 80 proof - 1/3 c
How to make pina colada cake:
Blend all ingredients (except coconut) in large bowl. Beat 4 minutes at medium speed. Stir in coconut. Bake at 350° for 30 minutes in two 9-inch cake pans, greased and floured.Frosting:1 c. (8 oz.) crushed pineapple (do not drain)1 (4 oz.) pkg. vanilla or coconut cream instant pudding1/3 c. dark rum8 oz. Cool Whip, softened1 c. flaked coconut Mix pineapple, pudding, Cool Whip and rum; blend. Let set to firm up (chill 30 to 40 minutes). Spread between layers. Frost sides and top.
