- sugar - 2 lb
- whole cloves - 2 Tbsp
- whole allspice - 2 Tbsp
- whole mustard seed - 2 Tbsp
- distilled white vinegar - 3 c
- watermelon rind - 3 lb
- salt for each qt
- pieces stick cinnamon 3 inches each - 6 item
How to make pickled watermelon rind:
Cut rind into 1-inch cubes; trim off outer green skin and bright pink flesh. Soak overnight in enough salted water to cover; drain. Heat sugar and vinegar to boiling. Tie spices in cheesecloth bag.
