Ingredients/Components

  • sugar - 3 c
  • vinegar - 2 c
  • celery seed - 2 tsp
  • onions, sliced - 2 c
  • mustard seed - 2 tsp
  • canning salt - 1/2 c
  • pickling spice - 1 tsp
  • sliced squash - 8 c
  • medium bell peppers, sliced - 4 item

How to make pickled squash:

Sprinkle canning salt over dry squash; let stand 1 hour. Rinse well. Bring sugar, vinegar and spices to a boil. Add squash, peppers and onions. Bring to another boil; remove from heat. Put in sterilized jars; turn upside-down until cool. Squash are ready to eat when cooled.
