Ingredients/Components

  • sugar - 3 c
  • vinegar - 2 c
  • salt to taste - 1 item
  • celery seed - 2 tsp
  • bell pepper - 2 c
  • mustard seed - 2 tsp
  • onions - 2 c
  • squash, sliced thin - 8 c

How to make pickled squash:

Mix squash, onions, bell pepper and salt. Let set 3 hours. Mix remaining ingredients and bring to boil. Drain squash and add to vinegar mixture. Bring to a hard boil, then put in hot jars and seal.
