Ingredients/Components

  • salt - 2 tsp
  • parsley - 1 Tbsp
  • wine vinegar - 1 Tbsp
  • mushrooms - 1 lb
  • sliced celery - 1/2 c
  • sliced green olives - 2 Tbsp
  • sliced ripe olives - 2 Tbsp
  • clove garlic, split - 1 item
  • salad oil olive and canola - 2/3 c
  • lemon juice or more to taste - 2 Tbsp
  • capers can use more - 1 Tbsp

How to make pickled mushrooms:

Cook mushrooms in 1 inch of water with 1 teaspoon of salt for 5 minutes. Cool mushrooms before adding other ingredients. Place in refrigerator at least 24 hours. Turn jar frequently to marinate. May want to double recipe; it goes fast!
